I think that you can’t go wrong with eggs and cheese right? It is a lovely combination and my family is a big fan. Today I decided to be more creative and I cooked a Three Cheese Quiche, a simple amazing dish with basic ingredients and endless filling options.
A Quiche is a savoury open-faced pastry crust with a filling of savoury custard with eggs, cheese, ham, onion. It looks like a tart thats why most of the people can’t tell the difference.
A Quiche is often called a pie with a tall custard and with generous filling.
Tarts are always shallower than quiches, can be made with puff pastry or shortcrust and can be filled with anything sweet or savoury.
I usually keep different kinds of cheeses in my fridge until they’re so stale there’s nothing much to do but throw them out. This Cheese Quiche is a simple solution for giving those cheese leftovers a new meaning in life in a custard base. You can use any leftovers from your fridge, cheese and ham with onions or mushrooms or any kind of vegetables, the key is yours.
This recipe is pretty basic, the custard is pretty much the same for all the types of quiches, only the filling is different. So, let’s see Three Cheese Quiche!

- For the crust
- Flour - 2 cups (200 g)
- Butter - 2.85 oz (80g)
- fat sour cream - 1/2 cup (100 g)
- Egg yolk - 1
- Salt - 1/2 teaspoon
- For the filling:
- Gouda cheese - 3.5 oz (100 g)
- Cheddar cheese - 3.5 oz (100 g)
- Parmesan Cheese - 1.75 oz (50 g)
- Fat sour cream - 2/3 cup (150 g)
- Milk - 1/4 cup (50 ml)
- Eggs - 4
- 1 Bunch of fresh Chives
- Grated nutmeg
Cut the butter into cubes and mix with flour until it becomes a fine sandy mixture.
Mix sour cream with egg yolk and salt, then combine with the sandy mixture and knead the dough until smooth. Be careful not to over knead.
Wrap the dough in foil and chill for about 1 hour.
Preheat your oven to 390 degrees F (200 degrees C) and grease a 10 inch ( 26 cm) round baking form with butter.
Roll the dough out on a floured surface than lay it in the buttered baking form and make sure you get a small edge.
Using a fork prick the dough several times then pre-bake for about 10 minutes.
Meanwhile prepare the filling. Grate the three types of cheese. Wash and chop the Chives. Beat the eggs and mix with cream, milk, salt and spices, then pour the mixture into the pre-baked form. Lower your oven temperature to 355 degrees F (180 degrees C).
Bake the Three Cheese Quiche on your oven middle shelf for about 30 minutes.
Remove from oven and serve hot or cold next to a veggie salad.
