How can you not love cookies? One of my favourite desserts, Soft Raisin Cookies is a quick cookies recipe, with few ingredients and great as a tea snack.
My son is very pleased to help me each time we have something to bake, and raisin cookies make him very happy because he enjoys playing with the dried fruits. Today I’ll show you a raisin cookies recipe with butter and raisins that is quite easy and that can sweeten a gloomy Sunday afternoon.
If you do not like raisins, although this is the best part, you can substitute with other dried fruits, walnuts, almonds or chocolate chips.
Preheat your oven to 360 degrees F(180 degrees C).
In a kitchen robot bowl mix butter with sugar until you obtain a paste, add salt, lemon and vanilla, next add the eggs one by one,until well incorporated, add flour and mix well until it becomes homogenous.
Finally add raisins and mix until they are evenly distributed into dough.
Line with baking paper two large baking trays (I used my oven baking trays, and they were perfect for the amount of cookies resulted from the quantities above).
Drop teaspoonfuls of batter on the baking paper, leaving about 2 inches (3cm) between each spoonful in order to avoid sticking to each other.
Place the tray in the oven and bake for about 10 to 15 minutes or until slightly golden. Remove the Soft Raisin Cookies from the oven and allow them to cool. Gently lift the cookies off the baking paper. Serve with hot chocolate or a cup of tea.
