Today I went to the market and found a local producer who had a lot of organic products. Smoked Trout was simply an offer I could not refuse. Freshly smoked trout had an awesome aroma, very juicy and tasty, so I had buy one for cooking this Smoked Trout Potato Salad.
Trout is one of the most appreciated fish for its good taste, and nutritive properties.
Very rich in Omega 3 fatty acids, vitamin D, folic acid, vitamin B12 and protein, trout is one fish with a low amount of mercury being recommended as part of a healthy diet. If we like so much this amazing fish I thought that a Smoked Trout Potato Salad, with fresh new potatoes from the market, would be the perfect choice for a healthy lunch.
This is a simple recipe, you can find all the ingredients in the market or in any grocery store. If you don’t have a smoked trout you can use smoked mackerel, or smoked salmon.
For this recipe you need:

- Cook Time : 25 minutes
Place the red potatoes in a pot, put some salt and cover with cold water and bring to the boil, simmer until they are cooked (about 20-30 minutes). You can use a fork for trying them. When done, drain and allow to cool. Peel and cut into cubes.
While the potatoes are boiling, peel and cut the onion in very thin slices. In a bowl mix the mustard, creme fraîche, olive oil juice of one lemon, salt and pepper.
Mix the potatoes with the dressing, remove any bones from the smoked trout and flake the fish over the top, sprinkle the chopped chives and enjoy Smoked Trout Potato Salad.
