I found a peanut butter jar in my fridge and nobody touched it for weeks , so I was pretty close to end up its misery, by showing it the way to trash. Close, but not to close… On my way to the trash bucket I started reading its label, and I discovered that you can bake amazing peanut butter cookies using a very quick recipe, with simple ingredients. So I decided to give it a try and to surprise my family with this new dessert idea. So with just few ingredients and using a cookie stamper I have turned a peanut butter jar into a Simple Peanut Butter Cookies jar 🙂
Even though it is high in calories, peanut butter is a healthy food. In general unrefined peanut butter is healthier because it retains more of the peanuts beneficial nutrients.
In addition, processed peanut butter could contain added trans fats (which has proven that it increases the risk of cardiovascular disease). Another risk is the incorrect conservation and peanut butter could develop mold, which could produce aflatoxin (a very toxic and carcinogenic substance). Therefore, the best option is natural peanut butter. So let’s get to our Simple Peanut Butter Cookies.
Cream butter and peanut butter with brown sugar. Add eggs one at a time and mix well.
Add flour, baking powder, salt and nutmeg and mix until smooth. Knead the dough about 3 minutes to form a ball, refrigerate 30 minutes to 1 hour.
Spread the dough, cover with a baking sheet, and using a pastry roller flatten to about 1 cm thick. Dab cookies using a cookie stamper (be careful to flour the stamper between applications to prevent the dough adheres to the stamper). Cut out biscuits using a cookie cutter of the stamper size.
Space a little the biscuits from each other and brush with egg yolk using a pastry brush. Keep in the fridge until you preheat the oven to 360 degrees F(180 degrees C).
Bake for about 12 minutes, until lightly browned. Cool completely this amazing Simple Peanut Butter Cookies before serving.
