There are a few weeks since my son had fish for lunch. Since his body is in constant transformation and healthy ingredients are a must I thought to choose a good fish , but not just any fish -a king among fishes: Salmon.
And as fish is not among his favourite foods, I thought to cook Sesame Crusted Salmon, because I know that is attracted to small sesame seeds and we could have a lot of fun as we eat.
Salmon is a fatty fish rich in Omega 3 which is good to heart health. Raw fish contains many enzymes that destroy thiamine, as it is called vitamin B1, with important role in metabolism and maintaining the nervous system.
The heat inactivates these enzymes, so it is much safer to eat fish cooked, especially this meat does not require much time for preparation, nor are cooked to high temperatures, so that all the important nutrients such as Vitamin B, Omega 3 and vitamin D are stored in salmon meat and you will make the most of their healing properties.
Sesame seeds can be eaten as they are in various dishes or crushed and then added to salads, sauces and desserts.
From sesame seeds yield a very tasty oil with medicinal virtues. Wonderful sesame seeds can treat asthma, improve brain health, increase fertility, supports the endocrine system, treats anemia, fights against insomnia, prevent diabetes, detoxifies liver and improves iron absorption in the body. I used for this Sesame Crusted Salmon, black and white sesame seeds.
Preheat oven to 390 degrees F (200 degrees C).
Wash Salmon slices and then put on kitchen towels and dry. Season with salt, pepper and ground coriander seeds. Put on a shallow dish mixed sesame seeds. Brush seasoned slices with a tablespoon of olive oil then cover evenly with sesame seeds.
In a pan put baking paper and grease evenly with remaining olive oil, then place the salmon slices and put them in the oven for 30 minutes.
After 30 minutes remove your Sesame Crusted Salmon and let it rest for 2-3 minutes. Serve with mixed salad sprinkled with lemon juice and Creamy Mushroom Risotto.
