Plum Dumplings

This is a recipe from my grandmother notebook, which everyone in my family cook, with pleasure, in autumn when the plums are sweeter and more tastier than ever.
Plums, besides they are tasty, and they have different therapeutic effects, aids digestion and has a laxative effect, helps eliminate toxins and purify the liver.

Plums are eaten fresh, dried, stewed; are used to prepare fruit salads, sauces, jams and cakes, and me and my family are big plums consumers.
Plum dumplings are prepared throughout Europe, each with a preferred embodiment, golden breaded or not breaded, cinnamon or without, with more dough or more fillers. I’m going to introduce you our favorite version with golden breadcrumbs, cinnamon and lots of stuffing.
Plum dumplings are a dessert that requires longer cooking, are made from a potato based dough that will “dress up” the plums, then we will boil the lovely dumplings, roll them in bread crumbs and brown sugar and cinnamon. Enjoy!

Wash and boil the potatoes in their skins.
Wash plums and remove pits without cutting plums in half, I like to have whole plum dumpling. Place them in a bowl, sprinkle sugar and cinnamon inside each plum and leave them aside, until preparing the dough.

Clean boiled potatoes skins and crush them while they're still warm, then let them cool.

After the mashed potatoes came to room temperature, add the flour, semolina, salt, eggs, oil and mix. We get a sticky dough, but homogeneous. However, if the dough seems too soft you can add more flour and semolina (1 tablespoon of each).

Bring a pot of water to boil.

Divide dough into 2 parts because is easier to spread. Powder with flour work surface and spread one piece of 1/2 to 1 inch thick.

Cut pieces, depending on how big the plums are, square shaped. Place plum in the middle of the piece of dough, pack, powder with little flour and rotate between your hands until it becomes spherical.

Each dumpling is placed on a surface dusted with flour with space between them not to stick together. When all the dumplings are ready, place, one by one, in boiling water and expect to emerge (10-15 min).

While dumplings cook, heat a non-stick pan and melt the butter. Add the breadcrumbs, cinnamon and stir until golden. Turn heat of, let it cool, then add the sugar.
Remove boiled dumplings with a strainer and cover completely in breadcrumbs mix.

From the quantities above mentioned I got 18 tasty dumplings
