How about a special banana cake with simple ingredients and very tasty? I am thinking about a nice Moist Banana Nut Bread filled with walnuts and sweet raisins… Hmmm?
Now let’s see some considerations about our ingredients.
Bananas are effective because they provide to our body all the vitamins and minerals needed and they are so sweet and kids just love them. Fruits are low in saturated fat and sodium and are a good source of dietary fiber, Vitamin C, Potassium and especially Vitamin B6. Bananas are good for active people, eating banana before a hard workout will energize our body and will maintain blood sugar level. However Banana is the only fruit that contains starch, so their consumption by diabetic or people who want to lose weight should be restricted.
As bananas ripen, the starch turns into sugar which increases the calorie content and glycemic index, which is why in my recipe will find a smaller amount of sugar than in other recipes.
I’m sure, just like me, you buy bananas in excess, keep them in the fruit basket on the table and some turn black and no one wants them anymore. In this case, I suggest you try my recipe for Moist Banana Nut Bread, with nice crumble on top and once you’ll see how sweet and aromatic is, I am sure you will cook it again and again.
Banana bread is a moist cake, a true traditional American sweet, that can be served at breakfast or as dessert.
The recipe is quite simple, I added walnuts and some very tasty black raisins and I’ve made a lovely crumble on top, to give a special note to this so common cake.
- Prep Time : 45 minutes
- Cook Time : 60 minutes
- For crumble:
- Brown sugar - 0.9oz (25 g)
- Almond flour - 0.9oz (25 g)
- Butter - 0.9oz (25 g)
- Ground cinnamon - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Wholemeal - 1.9 oz (45 g)
- For Banana Bread:
- Butter - 4.4oz (125 g)
- Brown sugar - 3.5oz (100 g)
- Eggs - 2
- Medium ripe bananas - 3
- Raisins - 2 oz (50 g)
- Walnuts knife cut - 3.5oz (100 g)
- Wholemeal - 1 cup (225 g)
- Baking powder - 1 teaspoon
Start with crumb topping preparation. Mix in a bowl: butter, sugar and almond flour with a spatula until well smooth, then add the cinnamon and vanilla extract, and continue mixing, add flour and stir until large crumbs form.
Put the mixture aside, preheat oven to 350 degrees F (180 degrees C) and brush a baking pan, about (10x5x3 inches) with butter and then cover evenly with a thin coating of flour.
Place the butter at room temperature in a blender bowl and blend until very soft and tender, then add the sugar and mix further. Add the eggs, one at a time, then bananas, crushed well with a fork and mix to incorporate.
Finally add, chopped nuts, raisins, and flour mixed with baking powder and mix until all ingredients are incorporated. Do not overmix the composition once the flour has been added, this will develop the gluten, toughen the finished product and cause tunneling in the baked bread.
Scrape the composition into the prepared loaf pan, then sprinkle the crumbs in an even layer over the composition. Bake for about 1 hour, until the top is golden brown.
