I always liked Pretzels. It is hard not to love them: warm, fluffy on the inside and crusty on the outside. Simply delicious. The fact that I love bread and pastries is no longer a secret right?
So, this Homemade Soft Pretzels recipe is one of my favourite. Baking your own pretzels at home has both pros and cons: It is a quick recipe, the production cost is very low and your kitchen will be filled with amazing bread scent.
The down side is that you have a lot of dishes, a lot of cleaning and you will most likely eat more than you planned, and your diet will have to suffer. But considering that you know what ingredients are you using at home for this Homemade Soft Pretzels, I think they deserve to put on our aprons and start kneading.
- Serves 12
- White flour - 6 cups (750 g)
- Salt - 1 tablespoon (15 g)
- Lard or unsalted butter - 2 tablespoons (30 g)
- Malt syrup or sugar - about 2 tablespoons (25 g)
- Fresh yeast - 1.3 oz (30 g)
- Water - 1 1/2 cup (375 ml)
- For boiling
- Baking soda - 2 tablespoons (35 g)
- Water - 2.2 quarts (2 l)
- For sprinkling
- Coarse salt
- Sesame seeds
Combine flour, salt, lard, malt syrup, yeast and water and knead an elastic and shiny dough, for about 10 minutes using your kitchen robot.
Scrape the dough onto the floured surface and divide it into 12 pieces. Shape each piece into a medium size roll and let rest on the work surface for about 10-15 min covered with plastic film.
Meanwhile prepare two large baking trays lined with baking paper.
After 10-15 minutes, uncover the dough and, if necessary, lightly flour the work surface. Carefully shape each piece into thinner roll approximately 27.5 in (70 cm) long that is somewhat fatter in the middle and tapers out to the ends. Turn each roll into a pretzel shape by taking the two ends and crossing them twice, then pull the ends down and press them into the centre of the dough circle. Do it again for each soft pretzel.
Place the pretzels on the prepared baking sheet, cover with plastic film and proof for 45 min-1 hour, then transfer the baking sheet to the refrigerator and let rest for another 45 min -1 hour.
About an hour before you are ready to bake the pretzels, preheat the oven to 450 degrees F (230 degrees C). Shortly before you are ready to bake, bring the water to boil and add the baking soda.
When the water is boiling, carefully transfer the pretzels, one by one, to the boiling water. Boil for 10 seconds, then lift the pretzels from the water using a slotted spatula and return them to the sheet pan. Working quickly, sprinkle the top of each pretzel with coarse salt and sesame seeds. Continue until all the pretzels have been boiled and sprinkled.
Put these Original Soft Pretzels in the oven and bake for 20-25 minutes, until they are well done, with a light brown look.
Remove from the oven and enjoy Original Soft Pretzels like they should: next to a large glass of unfiltered beer together with your friends.
