This is also an old recipe from grandma’s notebook, Homemade Saltine Crackers are suitable for a lazy afternoon with friends or simply, something to chew while watching TV and drinking beer on the couch. I like to cook them whenever we have something to celebrate, on holidays or when we have some friends invited to our house.
The advantage of these crackers is that they will maintain their quality several days (just over 1 week) and they can be prepared in advance.
They are easy to make, are soft and tender, tasty and delicious and helps you get rid of all the extra cheese from the fridge.
- Prep Time : 55 minutes
- Cook Time : 45 minutes
- For the Dough
- Flour - 3 1/3 cups (500 g)
- Butter 82% fat - 1 1/5 cups (200 g)
- Cheese mix (half fresh cheeses (cottage cheese or any fresh cheese) and half maturated cheese (Emmental cheese, Cheddar cheese…) - 8 oz (200 g)
- Eggs - 2
- Salt - 1 teaspoon
- Fresh yeast - 1 oz (25 g)
- Sugar - 1 teaspoon
- Milk - 1/4 cup (50 ml)
- For decoration
- Large egg - 1
- Paprika - 1/4 teaspoon
- Caraway seeds
- Grated cheese
- Coarse salt
Dissolve yeast in warm milk, add sugar and let it rest for few minutes, meanwhile prepare the remaining ingredients.
Add flour in a bowl, add grated cheese, soft butter cut into cubes, add eggs, salt, then dissolved yeast and knead well the dough. If you have an electric mixer, it will do all the work.
Cover the bowl with plastic wrap and let rise for 30-45 minutes. If you hurry you can skip this step and you may start lying the crackers on the worktop- the quality will be the same.
The dough is spread on the worktop sprinkled with a little flour, form a sheet with a thickness of about 0.3 in (0.7-0.8 cm).
Beat the egg with a fork, add the paprika and brush the dough with a brush. It is so much easier than to brush each cracker. Cut the Homemade Saltine Crackers with a pizza cutter or a special cutter. After you have cut in even shapes sprinkle with caraway seeds, coarse salt, grated cheese and place in a pan on baking paper. Bake at 400 degrees F (200 degrees C) for 15 minutes or until well browned.
