With the arrival of winter and cold weather the human body tends to strengthen in particular by higher consumption of meat, that’s, maybe why, my husband is asking me all sorts of recipes with meat, especially pork … So I thought to choose an option that will satisfy and to be healthy.
Herb crusted pork tenderloin is a quick and simple recipe very tasty and low in calories.
Pork is a wonderful source of protein. A serving of 4 oz (100 grams) of meat provides about half of the daily requirement of an adult.
Pieces of pork carefully selected, no fat, are rich in protein and B vitamins (thiamin, niacin, vitamin B6 and B12) which play an important role in the healthy functioning of the body.
Let’s remember that pork is in the list of energy and nutrient content food due to the effect on metabolism and for maintaining fullness for long.
Grilling or baking in the oven can be an optimal solutions for the preparation of pork, in particular, and meat in general.
For Herb Crusted Pork Tenderloin I chose a pork tenderloin purchased from the local market and I thought of a herb crust consisting of: rosemary, thyme, basil and sage, but you can choose whatever herbs you want.

- Cook Time : 12 minutes
Put herbs mixture on a shallow dish, add salt and pepper and toss to become uniform.
Dry the Pork tenderloin using a paper kitchen towel then prepare the vinaigrette:
In a bowl mix with a spoon, Dijon mustard, a tablespoon of olive oil, vinegar and honey to form a sauce.
Spread the sauce on tenderloin using a kitchen brush. When tenderloin is full brushed cover with herbs and roll until it is completely covered.
Heat a tablespoon of olive oil in a non-stick pan, then place the Pork tenderloin in the pan and cook for about 3 minutes on each side covered with a lid.
If you like Herb Crusted Pork Tenderloin cooked longer then fry in the pan for 2 minutes on each side and then roast it in oven in a tray at 425 degrees F (220 degrees C).
