Each day, for the last two weeks I planned to cook something special, something simple and tasty, some Mexican spicy food so today I have a delicious recipe: Ground Beef Burritos, as I promised in a previous post. I chose to use Homemade Flour Tortillas because they are easy to make, additives free and more tasty, which we filled with ground beef, beans and guacamole. The recipe is very simple and very delicious and so, a pleasure to serve it at lunch on my shady porch.
My husband found this Mexican lunch at our house a great idea and decided that we should try again other tasty Mexican dishes.
I used fresh ingredients from the local market and canned beans, to save up time, to get four servings.
- Homemade Flour Tortillas - 4
- Ground beef - about 10 oz (300 g)
- Tomato sauce - 1 cup (200 ml)
- Chopped onions - 2
- Mixed beans can - 1
- Chopped parsley - 1 tablespoon
- Fresh ground pepper
- Red chilli flakes - one teaspoon
- Olive oil - 2 tablespoon
- Lettuce - one
- Guacamole - 8 tablespoons
- Sour cream - 4 tablespoons
In a large pan heat the olive oil and cook the chopped onion until softened. Then add the ground beef and cook until the beef is cooked through. Add salt, pepper and the chilli flakes and stir to combine. Add tomato sauce over the meat and simmer over low heat for 10 minutes. Add a little water if the mixture gets too dry. Stir in beans and chopped parsley.
To assemble the burrito, place the warmed tortillas on serving plates and divide the meat mixture between them. Top with Guacamole and lettuce and fold to enclose the filling.
Serve Ground Beef Burrito with sour cream.
