I admit! I am a big fan. These Fluffy Yogurt Pancakes are amazing I could have them every day for breakfast, but I know this would not be such a great idea…
It is a very simple recipe, with fresh yogurt, easy to make and ready in less than half an hour. Served with different fresh fruit, maple syrup, honey, nuts, chocolate or jams of any kind, it is delicious, so the options are endless, and you can have them in different varieties every time 🙂

- Cook Time : 20 minutes
Separate egg yolks and measure the remaining ingredients.
Beat the egg whites with a pinch of salt.
Mix yolks with sugar until the mixture expands, gradually add the melted butter, yogurt, milk and vanilla, then the flour, mixed with baking powder and baking soda, and finally the beaten eggs, stirring gently with a spatula to keep its volume.
Heat a non stick pan, spray a little oil or melted butter (you can skip this step if you want your pancakes with a crispy surface and less fat, but it is important to have a good quality non stick pan).
Pour a small amount of batter, using a ladle (about 1/4 cup) onto the skillet and tip to spread out or spread with spoon and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Do the same until you finish your batter. Of this amount you should get about 10-12 of Fluffy Yogurt Pancakes, depending on their size. Serve hot, but they are equally good cold. Bon Appetite!
