What about a salad delicacy?
This salad is perfect as an appetizer or can be a light and delicious meal. I am thinking about this Easy Waldorf Salad, whose ingredients are raw and fresh, it gives you the necessary vitamins and minerals for the whole day.
I’m not a big celery fan, but in this Easy Waldorf Salad is exceptional. It is surprising how a boring root like celery can get so marvellous.
The original recipe, invented in the late nineteenth century in the Waldorf Hotel in NY, contained only celery, mayonnaise and sour apples.
Other chefs subsequently added walnuts and raisins or grapes. I thought to give it a distinct note with a few thin slices of smoked salmon, and honestly I can tell you that was a great idea. Smoked salmon’s saltiness added to the sour-sweetness of apples mixed with homemade mayonnaise is pretty close to heaven…
I baked some wonderful baskets from pie dough sheets – so I got a very showy appetizer, tasty and nourishing. I invite you to try it.
- For Baskets:
- 60 pieces of 4.5x4.5 in (12x12 cm) pie dough sheets
- Butter - 1.75 oz (50 g)
- For Easy Waldorf Salad
- Diced apple - 1 cup
- Celery root grated - 1 cup
- Knife chopped walnuts - 1/2 cup
- Mayonnaise - 2 tablespoons
- Greek yogurt - 1 tablespoon
- Pinch of salt
- Smoked salmon slices (optional) - 1.75 oz (50 g)
First prepare the baskets, for which we need a special muffins tray to bake them.
Cut 60 pieces of pie dough sheets about 4.5x45 in (12x12 cm). Use 5 pieces per basket.
Each sheet is rubbed with a kitchen brush and overlaps the other so as not to coincide corners. When we superimposed 5 sheets place them in a hole in the tray. Do the same with each basket and then put them in a preheated oven at 360 degrees F (180 degrees C) for 15 minutes.
Let the baskets cool down until this Easy Waldorf Salad is ready.
Chop walnut with a sharp knife and put them in a bowl.
Clean the celery root and grate it, then sprinkle with a little lemon juice to avoid oxidation and put it over the walnuts.
Clean the apples and cut them into cubes, sprinkle them with a little lemon juice and put them in the bowl.
Add salt, mayonnaise and yogurt and mix well.
You may omit salmon, or if you wish you may decorate baskets with it or add it in the composition as I did. It is up to you.
I garnished with walnuts and thin slices of carrot and cucumber for color, but the possibilities are endless.
