Tomatoes are not just sweet vegetables you eat with pleasure, in the summer in a fresh salad or drinking in a refreshing tomato juice. They are full of nutrients good for our body in preventing cancer, maintaining healthy skin and strengthen bones. Tomatoes and basil are a great mediterranean pair that are very tasty in this Easy Tomato Basil Soup.
Tomatoes ranks second after potato, between vegetables used in the kitchen. Culinary popularity is understandable if we think of its many nutritional qualities, especially when combining them in a great variety of dishes.
Due to the insignificant number of calories but also the many vitamins that they contain, tomatoes can be used successfully in diets and can be an ally in weight loss.
So here is this tomato soup from fresh tomatoes:

- Cook Time : 50 minutes
- Ripe cherry tomatoes - 1 1/2 lb (700g)
- Spring onion chopped - 4
- Garlic clove - 1
- Olive oil - 1tbsp
- Celery chopped - 1
- Carrot (optional) chopped - 1
- Chicken stock - 16 fl oz (500 ml)
- Tomato puree - 3 tbsp
- Pinch of salt
- fresh parsley leaves chopped
- Black pepper
- Fresh or dry basil to taste
- Small pasta shapes - 2 oz (50g)
Put the carrot, spring onion, celery and garlic in a pan with olive oil and cook over a medium heat for 5 minutes, then add tomatoes, shaking the pan from time to time, until very soft. Stir in the chicken stock, parsley and tomato puree and bring to the boil.
Spoon the vegetables into a food processor or use a vertical blender and process until smooth.
Add the pasta and simmer gently for about 8 minutes, or until the pasta is tender. add salt, pepper and dry basil, to taste, then garnish with fresh parsley, or with thin slices of Parmesan cheese.
