With all this cookies and pastries, I had to cook also something healthy for my husband. He told me he was up for some salad, but something rich in meat and vegetable.
I had some beef tenderloin in the fridge and I sliced two nice pieces and cooked them on the grill for about 2 minutes on each side. Beef is fantastic, so nice and tender, a true delight. I have a nice dressing idea. I am not using mayonnaise this time, since I want a fat free salad, I am using Homemade yogurt, but you may use any yogurt, and Parmesan Cheese and this creamy dressing is delicious and next to beef it is a perfect combination. So let’s see this Beef Salad with Yogurt Dressing.
- 2 Beef tenderloin slices - about 0.2 lb.(100g) each
- 1 head iceberg lettuce, core removed and chopped
- Grated Parmesan Cheese - 0.75 oz (20 g)
- Cherry tomatoes - 3-4
- Fresh cucumbers - 2 medium size
- Red Bell pepper - 1 slice
- Red onion - 1 small
- Crushed garlic - 1 clove
- 1 Pinch of salt
- Black pepper
- Olive oil - 1 tablespoon
- Juice from 1/2 lemon
- Bread croutons - 1 cup
Season the tenderloin slices with salt and pepper. Grill them over high heat in a grill pan for about 1-2 minutes on each side depending on how thick they are. Remove from pan and let rest for few minutes then slice them.
In a bowl mix the yogurt with grated Parmesan Cheese, crushed garlic, sliced cucumbers, sliced Red pepper and olive oil. Add salt and pepper to your taste.
Slice the Iceberg lettuce and divide on two plates, pour the salad dressing and toss. Adjust salt and pepper to your taste and top with sliced beef tenderloin, bread croutons,cherry tomatoes and red onion slices. Enjoy this amazing Beef Salad with Yogurt Dressing.
