I confess, meat is not one of my favourite food, I always think that pastries and cookies are better but I am aware of their calories and I have to have a balanced diet . Because it has its place in our diet and I have a carnivore in the family, I often cook recipes with meat.

Pork loin is one of the most appreciated meat, often used in many kitchens. Next to tenderloin , pork loin is easy to cut, tenderise and can be cooked in many ways, seasoned with dry herbs and covered with smoked bacon offers a blend of great flavours that are welcome in a nice family Sunday lunch.

For a nourishing lunch I recommend these bacon wrapped pork loin rolls  next to  side dish of couscous and healthy vegetables.  Couscous is dish of semolina (granules of durum wheat) which is cooked very simple: just add hot water in a bowl over  a cup of couscous.

The recipe is relatively simple and cooked pork loin looks great and tastes absolutely wonderful. The dry herbs mix used for filling gives a fresh taste and Dijon mustard adds a spicy flavour which balance the salty bacon and the sweet paprika.

The bacon slices that I used to wrap rolls comes from a homemade smoked bacon, bought from local market and are shorter than the usual pancetta or bacon slices found in grocery stores. Bacon keep pork loin juicy and give a great taste for this quick and tasty recipe.

Salt and pepper 4 slices of pork loins, then pound with a hammer until it is tender,

In a small bowl mix the mustard, paprika and herbs ( a dry herbs mix of  thyme, oregano,parsley, mint and basil)

Meanwhile, put the couscous in a bowl and add hot water with salt to swell as directed on package

Brush each slice of meat with 1 teaspoon of the mixture, then roll it and  cover with thin slices of bacon.

Heat  two tablespoons  of olive oil in a pan and fry the rolls until they are browned on each sides and  cooked through, then take away and place on tissue paper.

While the rolls cook heat the  other 2 tablespoons of olive oil in a pan and sit fry the vegetables. I had a mixture of baby carrot, baby corn, red and yellow peppers and green beans, but you can use any vegetables you like. Add some salt and pepper and leave on high heat until they are cooked, it took me about 8-10 minutes, then place the on a plate next to couscous.

This preparation is easy, deserves to try and I ensure that you will pleasantly surprise your family.
