I like to have my cookie jar full of delicious cookies that go great in the morning with my coffee or in the evening next to a cup of milk, and this Almond Raspberry Linzer Cookies recipe is just perfect. Linzer cookies are found quite often in my kitchen pantry, are soft and tender, very tasty and easy to cook with your children.
The dough for these cookies is a classic dough with butter and a key ingredient: almond flour which gives a wonderful flavour. This dough is easy to prepare and handle, its secret is to keep it cold to be easy to cut and to maintain their shape while baking.
Roll each portion to a 1/8-inch thickness on a lightly floured surface; cut with a 3-inch flower-shaped cutter. Cut centers out of half of cookies with a 1 1/2-inch circle-shaped cutter. Place all flowers on lightly greased baking sheets.

- Cake flour - 2 1/3 cups (350 g)
- Almond flour - 1 cup (150 g)
- Unsalted butter - 1 cup (225 g)
- Powdered sugar - 1 1/4 cups (180 g)
- Eggs - 2
- Pinch of salt - 1
- Baking powder - 1/2 teaspoon
- Grated lemon rind - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Raspberry jam for filling
- Powdered sugar for decoration
In a large bowl mix butter (at room temperature) with sugar, add vanilla extract, lemon zest and eggs one at a time. Mix well, and finally add the flour, almond flour, baking powder and salt and knead well.
Wrap the dough in plastic cling and refrigerate for 30 minutes.
Roll the dough to a 1/8-inch thickness on a lightly floured surface; cut with a 3-inch flower-shaped cutter. Cut centers out of half of cookies with a 1 1/2-inch circle-shaped cutter. Place all flowers on lightly greased baking sheets.
Place in cooking tray and bake at 350 degrees F (180 degrees C) for about 10 minutes or until edges are light golden brown. No need to remove from the baking paper, until they are well cooled, so not to break.
After completely cooled, powder with powdered sugar the hollowed flowers and spread, on the not hollowed flowers, some raspberry jam and stick together.
They are best served the next day, since they are softer and the jam has flavoured the cookies. Delicious, try Almond Raspberry Linzer Cookies!
